Zucchini Fries
The Dijon mustard gives a great flavor and the panko crumbs gives it that “fried” texture without the added oil. I added hempseeds to give it a health boost and it adds to the texture. These are great as an appetizer or you could serve this as a side.

Ingredients:
3 medium zucchinis (sliced into “fries”)
1 cup panko crumbs
½ cup hemp seeds
½ cup nutritional yeast
¾ cup plant milk
2 Tbsp. Dijon mustard
1 tsp: garlic powder, black pepper, seasoned salt
Instructions
Preheat oven to 450 degrees F.
Line 2 baking sheets with parchment paper.
In a bowl whisk together the panko crumbs, hemp seeds, and nutritional yeast (dry coating).
In another bowl whisk together the mustard and plant milk (wet mixture).
Dip each zucchini fry into the wet mixture that coat in the dry coating.
Place dipped and coated fries on the baking sheet.
Back for 15 minutes then turn and bake for another 10 minutes or until fries are crisp and golden brown.
