Cassava was apart of my diet growing up, but I never knew it could be a fry! My mind was blown while at a vegan restaurant in Bastimentos, Panama. They had Yuca fries on their menu and once I tried them, I knew I had to recreate it when I got back home!

Ingredients:

 

                2 lbs. of yuca

                Avocado oil for frying (or an oil of your choice that will not burn at high temperatures)

                Season To Taste: seasoned salt, garlic & onion powder

 

  1. Peel and cut yuca into thick cut fries.

  2. Place yuca into a large pot and add water to cover.

  3. Boil yuca until it can be pierced easily with a fork (about 20 minutes).

  4. Drain.

  5. Heat the oil over medium high heat in a frying pan (you want to use enough oil to almost cover the yuca fries)

  6. Fry the yuca in batches (do not overcrowd frying pan) until golden brown and crispy on both sides.

  7. Remove and drain oil in a paper towel-lined bowl.

  8. Toss with seasonings to taste and serve hot.

  9. Enjoy
