We know most people have heard of black bean tacos, but we did not have black beans on deck and had to improvise. Thus, this recipe was born! Turned out delicious and will be in the Taco Tuesday rotation.

 

Ingredients:

·         1 (14 oz) can northern white beans

·         ¼ cup chopped bell peppers

·         ¼ cup diced onions

·         ½ - 1 Jalapeno (depending on heat tolerance)

·         1 tbsp oil

·         1 tbsp Nutritional yeast

·         1 tsp minced garlic

·         Corn tortillas

·         1 avocado cut into small chunks

·         1 roma tomato diced

·         ¼ cup chopped cilantro

·         1-2 limes cut into slices

·         Season To Taste: smoked paprika, onion and garlic powder, salt, chili seasoning, cumin

 

Instructions:

1.       Heat a skillet over medium heat and add oil to coat.

2.       Sauté onions, peppers, jalapeno, and garlic.

3.       Stir in beans, seasonings, and nutritional yeast.

4.       Cook until beans are thoroughly heated.

5.       Warm tortillas according to package directions.

6.       Arrange bean mixture in the center of each tortilla and top with avocado, tomatoes, and cilantro.

7.       Serve with lime to squeeze on top.
