white bean chili
We like classic chili, but we love white bean chili! It could be because I am a big fan of the flavors in this recipe. From the poblano peppers to the cilantro, to the lime juice, this recipe is definitely one of our favs!
Ingredients:
· 3 (14 oz) can of cannellini beans (drained)
· 3 (14 oz) can of great northern beans (drained)
· 1 (7oz) diced green chilis
· 2-4 cups of veggie broth (adjust according to desired thickness)
· 1 green bell pepper chopped
· 2 stalks of celery chopped
· 1 poblano pepper chopped
· 2 Jalapeño peppers chopped (adjust according to desired heat level)
· 1 serrano pepper chopped
· 3 garlic cloves chopped
· ½ of a large red onion chopped
· 1 tsp of better than bouillon (equivalent to one cube)
· ¼ cup chopped cilantro
· Juice of 1-2 limes
· Optional: 1 package of vegan chicken (I used Aldi’s chicken-less strips)
· Season To Taste: smoked paprika, garlic powder, onion powder, cracked black pepper, sea salt, cumin, chili powder
Instructions:
1. Place vegan chicken (if using) at the bottom of a 6-quart or larger crockpot.
2. Top with veggie broth, beans, celery, bell pepper, green chilis, poblano peppers, jalapeno peppers, cilantro, lime juice, garlic, onions, better than bouillon, and seasoning.
3. Stir to combine.
4. Cover and cook on low for 4-6 hours stirring occasionally and seasoning to taste.
