veganized funfetti cupcakes

When I have my nephews over the summer I like to get them involved in the kitchen. One of their favorite things to do with me is bake, mostly because they want to lick the bowl lol. Here is a super easy, fun kid friendly recipe.

Ingredients:

 

                1 box of Funfetti Cake (be sure the ingredients are vegan)

                12 ounces of 7up

                *Use vegan icing of your choice and don’t forget sprinkles!

 

Serves about 12+

 

  1. Preheat oven to 350 F.

  2. Line cupcake pan with paper liners or grease pan with oil and flour.

  3. Mix all ingredients in a bowl well.

  4. Pour batter into prepared cupcake pan.

  5. Bake for 15-20 minutes (when a toothpick, fork, or knife comes out clean)

  6. Let cool.

  7. Frost with your choice icing.

  8. Enjoy!
