Vegan Chocolate Cake
This cake comes out so moist and so yummy!
Ingredients:
· 1 cup vegan milk
· 1 tbsp apple cider vinegar
· 2 cups of all-purpose flour
· 1 ¾ cup sugar
· ¾ cup cocoa powder
· 2 tsp baking powder
· 1 ½ baking soda
· 1 tsp salt
· ½ coconut oil
· 2/3 applesauce
· 1 tbsp vanilla extract
· 1 cup of boiling water
· For icing: 1 cup softened vegan butter, ¾ cup cocoa powder, 1 ½ cups powdered sugar, 2 tsp vanilla extract, 3 tbsp vegan milk (use more if icing is too thick)
Instructions:
1. Preheat oven to 350 degrees F
2. Grease and flour 2 9-inch cake pans
3. In a bowl: combine milk and apple cider vinegar. Stir and set aside to curdle.
4. In another bowl: Add flour, sugar, cocoa, baking powder, baking soda, and salt.
5. Mix well.
6. Add oil, applesauce, vanilla, and your curdled milk.
7. Mix well.
8. Pour in boiling water slowly while mixing until well combined. (your batter will appear runny and that is what you want.)
9. Dive batter into cake pans.
10. Bake for 30-35 minutes.
11. Let cool then carefully remove cakes.
12. Frost once completely cooled.
