Tofu Scramble

Just think scrambled eggs, but so much better!

Ingredients:

                1 package of extra firm tofu (drained)

                1 cup chopped onions

                1 cup chopped mixed bell peppers

                2 cups chopped mushrooms

                2 cups of spinach

                1 large jalapeno diced

                ½ cup nutritional yeast

                1 tbsp. minced garlic

                2 tsp. turmeric

                1 tbsp. avocado oil (or cooking oil of choice)

                Season To Taste: seasoned salt, black pepper, onion powder

  1. Mash tofu into small curds (think scrambled eggs)

  2. Heat oil in a large skillet over medium-high heat.

  3. Add veggies (onions, peppers, mushrooms, spinach, garlic) and sauté until Spinach starts to wilt.

  4. Add tofu, nutritional east, turmeric, and other seasonings.

  5. Sauté until tofu is completely yellow and heated (2-3 minutes).

  6. Serve over toast with sliced avocado.

  7. Enjoy!
