Taco Soup
This is one of my favs! Because 1 it's super quick and 2 it tastes amazing! It continues to be my go-to on weeks I am pressed for time and cannot make a decision on what I would like to meal prep for the week. Speaking of meal prep, it re-heats well and tends to taste better over time.
Ingredients:
· 1 (14oz) can of black beans
· 1 (14oz) can of red kidney beans
· 1 (14oz) can of pinto beans
· 1 (14oz) can of corn
· 1 (14oz) can of stewed tomatoes
· 1 package of taco seasoning
· ¼ cup of chopped cilantro
· Juice from ½ a lime
· 1 can of green chiles
· Season To Taste: cumin, onion powder, garlic powder, salt (if needed)
· Toppings: tortilla chips, corn chips, vegan cheese, vegan sour cream, guacamole
Instructions:
1. Combine the undrained beans, corn, chilies, stewed tomatoes, in a pot.
2. Stir in taco seasoning.
3. Let simmer for 20 minutes then add cilantro and lime.
4. Taste and add other seasonings slowly, tasting as you go.
5. Let simmer for another 20 minutes.
6. Enjoy!
Note: This could also be made in a crockpot set on low 8 hours or high for 3 hours.
