szechuan eggplant

We love the crispness of the eggplant and the spicy yet sweet flavor of the sauce.

Ingredients:

·        1 eggplant cut into cubes

·        ½-1 cup Flour

·        ½-1 cup Aquafaba

·        1 ½ cups Breadcrumbs (seasoned with Chicken seasoning)

·        1 tbsp hot chili oil

·        1 tbsp minced garlic

·        1 jar of Szechuan sauce

·        2-4 Thai Chili peppers

·        Olive oil spray

Instructions:

1.      Place flour, aquafaba, and breadcrumbs in three separate bowls.

2.      Dip eggplant in flour, aquafaba, and breadcrumbs to coat.

3.      Spray eggplant with olive oil and place in an air fryer. (you can also bake these in the oven)

4.      Air fry or bake until eggplant is crispy and golden brown.

5.      Once eggplant is done, add chili oil to a heated wok.

6.      Add garlic, and chili peppers. Cook until fragrant.

7.      Add eggplant and Szechuan sauce. Cook until heated and well combined.

8.      Can be served with Asian style noodles or rice.
