sweet potato mac no cheese
Because sometimes life calls for a bowl of comfort [food]!
Ingredients:
· 16 ounces of pasta of your choice
· 1 large sweet potato
· 1 cup of nutritional yeast
· ½ cup of vegan milk (can add more or less depending on the thickness you want)
· Splash of soy sauce
· 2 tsp. of Dijon mustard
· Garlic clove
· ½ cup onions
· ¼ of green and red peppers mixed
· 1 tbsp. of avocado oil (or the oil of your choice)
· Season to taste: salt, black pepper, garlic and onion powder, cayenne pepper, paprika
Instructions:
1. Wash and peel sweet potato.
2. Cut sweet potato into cubes and boil until soft.
3. While sweet potato boils, Boil pasta in a separate pot and sauté onions and peppers in oil until onions are translucent.
4. Once sweet potato is soft, drain and add it to a food processor. (blender, nutribullet, ninja, etc. will work as well)
5. Add all other ingredients except seasonings with sweet potatoes and blend until smooth.
6. Now add seasonings. Blend and taste until sauce is flavored to your liking.
7. Add “vegan liquid gold” to cooked pasta.
