Sweet potato Bread
Ingredients:
1 ½ cup mashed sweet potato (*see how to make this below)
½ tsp. salt
2 tsp. baking powder
2 ½ cups rolled oats, ground into flour (I used my ninja,
you can also buy oat flour)2 tbsp Ground Flax + 6 tbsp of hot water (mix and let it sit
for 5 minutes, this will be your egg replacer)1 tsp. cinnamon
1 tsp. nutmeg
Dash of all spice
¼ cup agave
1 tsp. apple cider vinegar
½ cup plant milk
1 tsp. vanilla
¼ cup almond butter
Instructions:
1. Preheat oven to 350 degrees F.
2. Combine all dry ingredients in a bowl and mix well.
3. In another bowl, combine mashed sweet potatoes,
almond butter, plant milk, flax “egg”, agave, vanilla, and apple cider vinegar.
4. Pour batter into a greased or lined loaf pan and
bake for 60-70 minutes (or until a fork comes out clean).
5. Let it cool for 10 minutes before removing from
loaf pan.
6. Then let it cool completely before slicing.
7. Drizzle with maple syrup.
