rum cake

This is a family fav that we veganized!

Ingredients:

·         3 ½ cups all-purpose flour

·         ¼ cup cornstarch

·         2 ½ tbsp baking powder

·         ¾ tsp salt

·         Optional: ¼ tsp turmeric (for color)

·         1 cup white rum

·         Splash of rum extract

·         1 tsp vanilla extract

·         1 cup vegan milk

·         2/3 cup coconut oil

·         2 cups sugar

·         3 tbsp applesauce

·         Rum Glaze: ½ cup butter, 1 cup sugar, 1/4 cup water, ½ cup rum

·         Topping: Simple icing (rum glaze mixed with powdered sugar) and walnuts

Instructions:

1.       Preheat oven to 350 degrees F.

2.       In a Bowl: Combine flour, cornstarch, baking powder, salt, and turmeric.

3.       In another Bowl: Combine rum, rum extract, vanilla, milk, coconut oil, sugar, and applesauce.

4.       Add wet ingredients to the dry ingredients. Mix well.

5.       Pour cake batter into a greased and floured Bundt pan.

6.       Bake for 1 hour.

7.       Remove cake from the oven and pour glaze over the top. Let cake cool and absorb glaze.

8.       To make Rum Glaze: in a saucepan, combine butter, water, and sugar. Bring to a boil and boil for 5 minutes stirring constantly. Remove from heat and stir in rum.

9.       Remove cake from Bundt pan carefully. (Optional: top with icing and walnuts)
