red lentil burger
I am a big fan of veggie burgers! I rather make them myself then get the prepackaged ones that have extra ingredients that I question the nutritional value of. These burgers are full of flavor and nutrition.
Ingredients:
· 1 cup of dry lentils
· 2 ½ cups of water
· 1 packet of Goya Sazon (or ½ tsp. of salt)
· 1 tbsp. avocado oil (or oil of choice)
· ½ onion (diced)
· 1 cup of shredded carrots
· 1 tsp. garlic powder, onion powder, chili powder (adjust as needed)
· 2 tbsp. liquid aminos (or soy sauce)
· 1 tbsp. minced garlic
· ¾ cup rolled oats
· ¾ cup breadcrumbs
Instructions:
1. Boil lentils in the water with a packet of sazon, until lentils are soft.
2. Preheat oven to 400 degrees F.
3. Place oil in a pot and sauté onions, carrots, and garlic until carrots are soft.
4. In a bowl mix the lentils, onion/chili/garlic, seasonings, liquid aminos, oats, and breadcrumbs.
5. Form the mixture into patties. (should yield about 8)
6. Bake burgers for 20 minutes.
7. Enjoy!
