Pumpkin Pie Overnight Oats

I love overnight oats! Just place everything in a jar the night before and boom! Breakfast the next morning! Perfect for those busy days so you don’t have to skip what they call the most important meal of the day.

Ingredients:

 

1 cup of rolled oats

¾ cups plant milk

½ cup pumpkin puree

1 tsp pumpkin spice

½ tsp cinnamon

1 tsp vanilla extract

Dash of nutmeg

1-2 tbsps maple syrup (or preferred sweeter)

    Toppings (optional): honey roasted pecans, crushed graham crackers

Makes about 2 servings

  1. Mix together oats, plant milk, pumpkin puree, pumpkin spice, cinnamon, vanilla, nutmeg, and maple syrup in a bowl.

  2. Pour mixture into two mason jars equally (or any airtight container) and cover with lids.

  3. Refrigerate overnight (or at lease 4 hours) so that oat will soften and absorb the liquid.

  4. Remove jars form refrigeration, stir and top with toppings of your choice.

  5. Enjoy!
