pumpkin fettuccine
Ingredients:
· 1 package of Fettuccine noodles cooked according to package
· 1 tbsp avocado oil
· 1 tbsp minced garlic
· ½ of a red onion chopped
· 1 bag of baby spinach
· 1 package of sliced mushrooms
· 1 can of pumpkin puree
· 1 ½ cups vegan milk (can adjust so sauce is the consistency you prefer)
· ¼ cup nutritional yeast
· Season To Taste: sage, thyme, onion/garlic powder, salt, pepper
· Topping (optional): seasoned bread crumbs toasted in a skillet with a little oil
Instructions:
1. Sauté onions and garlic.
2. Add mushrooms and spinach. Continue to sauté.
3. Add pumpkin and vegan milk. Stir well.
4. Add nutritional yeast and seasonings to taste.
5. Bring to a simmer and cook on medium-low heat for 5 minutes.
6. Toss cooked pasta with sauce and server warm
7. Top with toasted seasoned breadcrumbs.
8. Enjoy!
