plantin chocolate chip bread

I had leftover plantin from another recipe, so I decided to see if I could make a flourless bread with it. Decided to add some chocolate chips to satisfy my sweet tooth and bam! This became one of those experiments gone right!

Ingredients:

                1 ripe Plantain

                2 tbsp. agave

                2 tbsp. vegan chocolate chips (and a little extra to put on the top)

                2 tbsp. flax meal mixed with 6 tbsp. of hot water (mix this together and let it sit for 5 minutes. This combo is your Flax Egg)

                3 tbsp. nut butter (I used Peanut Butter)

                1 tbsp. Nutmeg

                1 tbsp. Cinnamon

                Splash of Vanilla Extract

                Pinch of Allspice (optional)

                *Makes a small loaf of bread

 

  1. Preheat oven for 350 degrees F.

  2. Grease a small loaf pan.

  3. Place all ingredients (minus the chocolate chips) into a food processor or blender.

  4. Blend well.

  5. Stir in chocolate chips and transfer mixture to loaf pan.

  6. Top with additional chocolate chips.

  7. Place into the oven and bake for ….minutes or until a fork comes out clean.

  8. Remove from the oven and let cool.

  9. Enjoy!
