Pineapple Fried Rice

Take your fried rice to the next level by adding pineapple!

Ingredients:

·         1 cup of cooked rice

·         1 tbsp cooking oil

·         1 tbsp minced garlic

·         ½ red onion (chopped)

·         1 tbsp ground ginger

·         1-2 cups of fresh pineapple

·         ½ cup diced red bell pepper

·         1-1 ½ cups of air fried tofu (can bake or pan fry)

·          ¼ cup of soy sauce

·         ½ cup green onions (chopped)

·         ¼ cup Purple cabbage (shredded)

·         ¼ cup Carrots (shredded)

·         ¼ cup basil (chopped)

Instructions:

1.       Place oil in a heated Wok or Skillet.

2.       Add garlic, red onion, and ground ginger. Cook until fragrant.

3.       Add pineapple, bell pepper, and tofu. Combine and cook for 1-2 minutes.

4.       Add cooked rice and soy sauce. Cook for 2-3 minutes.

5.       Add carrots, cabbage, green onions, and basil. Combine and cook for an additional 2-3 minutes.

6.       Enjoy!
