Patacones
(Fried Green Plantain)
During my travels to Central and South America, these became my fav! I basically ate them everyday at almost every meal (judge me if you must). So simple and so good! Try these alone with just some salt on top or dip them into my avocado sauce and thank me later.

Budget Friendly
Ingredients:
2 green plantain
Avocado oil for frying (or an oil of your choice that will not burn at high temperatures)
Season To Taste: Salt
Optional: Dipping sauce or your choice
Peel the plantains.
Cut the plantains in to thick slices.
Heat the oil over medium high heat in a frying pan (you want to use enough oil to almost cover the plantain slices)
Fry the plantains until they start to get yellow, but not golden.
At this point, remove the plantains and place them on a paper towel to drain the oil.
Use the bottom of a small glass bowl to smash and flatten the plantains. (Do this gently to keep the slices from breaking.
Then place flattened plantain back into the oil and fry plantains of each sider until golden (1-2 minutes per side).
Remove from the oil and drain oil ono paper towel again.
Sprinkle with salt.
Serve warm.
