nasturium pesto
I never thought to eat nasturtium leaves until a friend offered us some from her garden. These leaves add a nice kick to traditional pesto!
Ingredients:
· 2 cups of nasturtium leaves (cleaned)
· ¼ cup pistachios
· ½ cup olive oil
· ½ cup nutritional yeast
· salt & pepper to taste
· 1 tbsp minced garlic
· Juice from one lemon
Instructions:
1. Fill your food processor up with as much nasturituim leaves as it can handle loosely. Blend until they are chopped. Add any leftover leaves and blend.
2. Add in pistachios. Blend.
3. Add in nutritional yeast, oil, salt, pepper, garlic, and lemon. Blend.
4. Taste. Add any additional ingredients according to your liking.
5. Enjoy!
