mongolian seitan
Skip the take-out and make it yourself! This recipe is easy and the results are tasty!
Ingredients:
· 2 tbsps oil of your choice (I prefer avocado oil)
· ½ tsp ground ginger
· 3 cloves minced garlic
· ½ tsp Chinese five spice
· 1 tsp red pepper flakes
· ½ cup of low sodium soy sauce
· ½ cup + 1 tbsp coconut sugar (or use ½ cup of brown sugar)
· 2 tsp cornstarch
· 2 tbsp cold water
· 2 packages of Seitan (I used Westsoy by Yves)
· Season To Taste:
· For serving:
§ Toasted sesame seeds
§ Sliced scallions
Instructions:
Seitan:
1. Heat 1 tsp oil in a skillet over medium heat.
2. Add Seitan and cook for 4-5 minutes stirring frequently until browned.
3. Set aside and make the sauce.
Sauce:
1. In another skillet heat 1 tbsp oil over medium heat.
2. Add garlic and ginger stirring constantly for about 30 seconds.
3. Add Chinese five spice and red pepper flakes and cook for about 30 more seconds.
4. Add the soy sauce and coconut sugar and stir well.
5. Reduce heat and let simmer until the coconut sugar is dissolved stirring occasionally for about 5 minutes.
6. Whisk together cornstarch and cold water in a small bowl, then add it to the skillet and stir.
7. Cook for another 2 minutes until the sauce becomes thick.
Bring It All Together:
1. Add Seitan.
2. Mix well and continue cooking for another minute.
3. Remove from heat and top with toasted sesame seed and sliced scallions.
4. Serve with brown rice or quinoa.
5. Enjoy!
