Jiffy Cornbread

 If you are like  me, growing up you did not realize that there were any animal products in the original mix, and now that you read all things labeled; it came as an unpleasant surprise. But shout-out  to Jiffy for making a vegetarian version of their beloved cornbread mix. Here is how to veganize the instructions you see on the box.

Ingredients:

 

  2 boxes of Vegetarian Jiffy Cornbread Mix

  2/3 cup Vegan Mayo

  2/3 cup plant milk

  1 tbs. of Blue Agave (can use sugar if you prefer)

 

 

Serves about 12

 

  1. Preheat oven to 350 F.

  2. Line cupcake pan with paper liners or grease pan with oil and flour.

  3. Mix all ingredients in a bowl well.

  4. Pour batter into prepared cupcake pan.

  5. Bake for 15-20 minutes (when a toothpick, fork, or knife comes out clean)

  6. Let cool.
