This Jambalaya skips the meat but does not skip the flavor!

 

Ingredients:

·         1 (14 oz) can of kidney beans (drained)

·         1 (14 oz) can of chickpeas (drained)

·         1 ½ cups of rice (note that brown rice may require more liquid and cooking time)

·         2 cups of veggie broth

·         1 bell pepper chopped

·         2 stalks of celery chopped

·         ¾ of red onion

·         1 jalapeno chopped

·         1 tbsp minced garlic

·         1 (28 oz) can of crushed tomatoes

·         1 tbsp of tomato paste

·         1 tbsp of oil

·         2 bay leaves

·         4 vegan sausage links

·         Season To Taste: Smoked Paprika, Creole Seasoning, Thyme, garlic powder, onion powder, cayenne pepper

·         1-2 tbsp of Louisiana hot sauce

 

1.       Heat oil in a large pot.

2.       Add chopped veggies and sauté.

3.       Add sausage and cook for about 3 minutes.

4.       Add beans, rice, broth, tomatoes, tomato paste, bay leaves, hot sauce, and seasonings to taste.

5.       Cover and simmer for 20-25 minutes or until rice is cooked while stirring occasionally.

6.       Taste. Adjust seasoning and spice level, as necessary.

7.       Enjoy!
