Looking for some extra plant-based protein?! Well this chili got you covered. It is made with beans, veggie crumbles, and served with quinoa for added protein punch!

 

Ingredients:

·         1 bag of beyond meatless crumbles

·         ½ red onion

·         1 tbsp. avocado oil

·         1 cup of shredded carrots

·         1 jalapeno, diced

·         2 tbsp. minced garlic

·         2 tbsp. of chili powder

·         2 tsp. cumin

·         1 tsp. paprika

·         1 tsp. oregano

·         1 (14 oz) can diced tomatoes

·         1 (14 oz) can kidney beans

·         1 (14 oz) can pinto beans

·         1 bay leaf

·         2 sprigs of thyme

·         2 tbsp. chopped cilantro

·         1 cup quinoa

·         Season To Taste: salt, cayenne pepper, garlic powder, onion powder

 

Instructions:

1.       Cook quinoa according to the package directions.

2.       Heat oil in a large pot.

3.       Sauté onions, jalapeno, carrots, and garlic until onions are translucent.

4.       Add meatless crumbles, cook unit frozen crumbles are heated through.

5.       Add beans and tomatoes.

6.       Add seasonings (adjust to your liking), bay leaf, cilantro, and thyme.

7.       Let simmer so flavors can come together for at least 30 minutes.

8.       Place cooked quinoa in a bowl and ladle chili on top to serve.

9.       Enjoy!
