gooey butter cookies

These became my fav on my first trip to St. Louis, MO so I had to veganize them!

Ingredients:

  • ½ cup vegan butter at room temperature

  • 1 (8 oz.) package of vegan cream cheese at room temperature

  • 3 tbsps of vegan vanilla yogurt (this will be your egg replacer)

  • ½ tsp vanilla extract

  • 1 package of white cake mix

  • ½ cup of Christmas sprinkles of your choice

  • ½ cup of powder sugar (placed in a bowl)

  • Optional: red and green sugar crystals

About 24 cookies

 

  1. In a bowl, cream together butter and cream cheese.

  2. Add yogurt, vanilla, Christmas Sprinkles, and cake mix. Mix well.

  3. Cover dough with plastic wrap and refrigerate for at least 1 hour to allow cookie dough to become firm.

  4. Preheat over to 350 degrees F.

  5. Line 2 cookie sheets with parchment paper.

  6. Potion chilled dough with a teaspoon into 1inch balls.

  7. Roll each ball in powdered sugar and place about 2 inches apart on prepared cookie sheets.

  8. Optional: Sprinkle colored sugar crystals on top of each ball

  9. Bake for 10-13 minutes.

  10. Let cookies sit for about 2 minutes before moving them to cooling racks to cool completely.
