This is a perfect meal for those busy weekdays. Minimal prep time is needed, and it cooks fast.

 

Ingredients:

  • ·         1 package vegan crumbles (I like Beyond Meat)

  • ·         1 red onion chopped

  • ·         1 tbsp avocado oil

  • ·         1 tsp sesame oil

  • ·         1 tsp ground ginger

  • ·         1 tsp black pepper

  • ·         3 cloves of garlic minced

  • ·         ½ tsp crushed red pepper

  • ·         4 cups shredded cabbage

  • ·         2 celery stalks chopped

  • ·         1 cup sliced mushrooms

  • ·         1 cup shredded carrots

  • ·         2 tbsp soy sauce (adjust this to your liking)

  • ·         ½ tsp Chinese five spice

       For serving:

  • §  Toasted sesame seeds

  • §  2 stalks of sliced scallions

  • §  Sriracha

Instructions:

1.       Heat avocado oil in a large skillet. Add onions and garlic. Sauté until fragrant.

2.       Add vegan crumbles and brown.

3.       Add carrots, celery, cabbage, mushrooms, soy sauce, red pepper, Chinese five spice, ginger, black pepper.

4.       Lower heat and cook until veggies are tender stirring occasionally. Can add a splash of water to prevent sticking if needed.

5.       Once veggies are tender add sesame oil and mix well.

6.       Serve warm topped with scallion and sesame seeds. Add siracha for a little heat if desired.
