Crispy Cauliflower Bites

This happened because my aunt did not have the hot sauce I needed to make buffalo cauliflower bites. Soooo I figured I could season the Cauliflower and dip it in the leftover avocado sauce we had in the fridge. The rest is this recipe! And FYI it was a hit at dinner! #winning

Ingredients 

Cauliflower Bites:

 

1 head of cauliflower cut into bites (think boneless wings)

 1 cup all-purpose flour

 1 cup of plant milk (may need a bit more to make the batter smooth)

 2 cups of panko breadcrumbs

Season To Taste: garlic & onion powder, seasoned salt, black pepper

 

Avocado Sauce:

               1 large Avocado

               1 cup Vegan Mayo

               Handful of cilantro

               1 tbsp. minced garlic

               Juice from 1 lime

               Season To Taste: onion powder, salt, cayenne pepper

               Food Processor or Blender

 

  1. Preheat to 400 degrees

  2. In a large bowl, add flour, plant milk, and seasoning. Whisk together until batter is smooth.

  3. In another bowl place panko crumbs.

  4. Line a baking sheet with parchment paper.

  5. Dip cauliflower in batter, making sure to coat each piece completely and let excess batter drip off.

  6. Then coat in panko breadcrumbs and place on a baking sheet lined with parchment paper.

  7. Once all the cauliflower is dipped and coated, place in oven for 25-30 minutes. (watch them closely and check for desired crispness)

8. For sauce: Put all the ingredients in a blender and add seasoning slowly until the desired flavor is achieved.

9. Dip cauliflower into the sauce and enjoy!
