Crabless Cakes

These were delicious! And its crazy how mushrooms can mimic crab meat.

Ingredients:

·         1-2 large pieces of Lions Mane Mushrooms

·         1 (14 oz) can of heart of palm

·         1 white onion

·         1 tbsp minced garlic

·         ½ red bell pepper

·         ½ cup scallions

·         ¼ cup of parsley

·         Juice from 1 lemon

·         2 tbsp of vegan mayo

·         ½ tsp rice wine vinegar

·         1 tbsp Dijon mustard

·         1 tbsp aquafaba (chickpea water)

·         ¼ cup almond flour

·         ¼ cup coconut flour

·         ½ cup bread crumb (use more if needed)

·         Olive oil

·         Grapeseed oil for frying

·         Season to taste: Old Bay, Creole seasoning, garlic powder, onion powder

Instructions:

1.       Clean and pull mushrooms into a crablike texture.

2.       Place on a baking sheet and coat with olive oil.

3.       Place in the oven at 350 degrees F for about 20 minutes.

4.       In a food processor: Add heart of palm, onion, garlic, bell pepper, and scallions. Pulse until you get a chunky mixture (not a paste).

5.       To a bowl: Add heart of palm mixture, cooked mushrooms, parsley, lemon juice, mayo, mustard, vinegar, aquafaba, almond flour, coconut flour, seasonings, and breadcrumbs.

6.       Mix well.

7.       Form into patties.

8.       Heat grapeseed oil in a skillet.

9.       Fry crabless on both sides until golden brown.
