Cilantro Lime Quinoa

Ingredients:
1 cup of quinoa
¼ cup chopped cilantro
Juice from 1 lime
1 tbsp vegan butter
2 cups of vegetable broth or water
1 tbsp minced garlic
Season to taste: salt, pepper, garlic powder, onion powder, smoked paprika
Serves about 4
In a pot, combine the broth or water with the quinoa and garlic.
Bring to a boil. Cover and reduce heat.
Cook until all liquid has evaporated, and quinoa is tender.
Remove from heat.
Add butter, cilantro, lime juice, and seasonings.
Stir well
