Cilantro Lime Quinoa

Ingredients:

                1 cup of quinoa

                ¼ cup chopped cilantro

                Juice from 1 lime

                1 tbsp vegan butter

                2 cups of vegetable broth or water

                1 tbsp minced garlic

                Season to taste: salt, pepper, garlic powder, onion powder, smoked paprika

Serves about 4

  1. In a pot, combine the broth or water with the quinoa and garlic.

  2. Bring to a boil. Cover and reduce heat.

  3. Cook until all liquid has evaporated, and quinoa is tender.

  4. Remove from heat.

  5. Add butter, cilantro, lime juice, and seasonings.

  6. Stir well

  7. Enjoy!
