Chocolate avocado pudding

Sometimes you want something naughty, but you know it’s better to keep it nice. Here is a dessert that makes you feel like your being bad, but you are actually being good.

Ingredients:

 

                1 medium sized ripe avocado

                3 tbsps. Unsweetened cocoa powder

                3 tbsps.  Agave or maple syrup (adjust sweetness to your liking)

                1/3 cup plant milk

                Splash of vanilla extract

Optional: Top with pistachios and or sea salt, Other topping

Ideas: vegan chocolate chips, nuts,                                                       

coconut, dairy-free whipped cream

 

Serves about 2

 

  1. Cut avocado open and remove the pit.

  2. Cut avocado into large chunks and put it in a blender.

  3. Add cocoa powder, agave or maple syrup, plant milk, and vanilla.

  4. Blend until smooth. (add a little more plant milk if necessary).

  5. Refrigerate pudding and serve cold.

  6. Top with pistachios and a pinch of sea salt or topping of your choice.

  7. Enjoy!
