Chickpea Salad Lettuce Wraps
Yummy, healthy, and clean.
Ingredients:
Chickpea Salad:
· 1 (14 oz) can of Chickpeas (rinsed & drained)
· 1 tbsp of lemon juice
· 1 shallot (or ½ small red onion) diced
· 2 tbsp dill weed
· 3 tbsp Cashew Cream (see recipe below)
· Romaine Lettuce
· Season To Taste: salt, garlic powder, & pepper
Cashew Cream:
· 1 cup raw cashews (soaked for at least 3 hours)
· 1 tbsp lemon juice
· ½ cup vegan milk (can add more to get the consistency you desire)
· ½ tsp salt
· Add all ingredients to a food processor or blender and blend until smooth.
Instructions:
1. Mash chickpeas in a bowl with a fork.
2. Stir in Cashew Cream, shallot, lemon juice, dill weed, salt, and pepper.
3. Serve in lettuce leaves.
4. Enjoy!
