cheddar bay biscuits

I used to love Red Lobster biscuits, so I had to veganize them! These tastes just like the restaurant fav without the dairy.

Ingredients:

  • 2 cups all-purpose flour

  • 2 tsp baking powder

  • ½ tsp baking soda

  • Pinch of salt

  • 1 tsp sugar

  • ½ tsp garlic powder

  • ¼ tsp cayenne pepper

  • 1 cup cheddar style vegan shreds (I like So Delicious brand)

  • 1 cup original unsweetened plant milk + 1 tbsp of lemon juice

  • ½ cup of melted vegan butter

  • Biscuit Topping:

    • 1 tbsp melted vegan butter

    • ½ tsp garlic powder

    • ½ tsp parsley

  1. Preheat oven to 475 degrees F.

  2. Line a baking sheet with parchment paper and set aside.

  3. Whisk together flour, baking powder, baking soda, sugar, salt, garlic powder, and cayenne pepper in a large bowl. Add cheddar shreds and set aside.

  4. In a medium sized bowl, combined the plant milk and melted butter until small clumps are formed.

  5. Add the milk mixture to the flour mixture and combine just until a dough forms and no dry ingredients remain.

  6. Drop heaping spoonfuls onto prepared baking sheet about 1 inch apart.

  7. Bake until golden brown, about 12 minutes.

  8. While biscuits are baking combine topping ingredients in a small bowl and mix well.

  9. Once baked, remove biscuits from the oven and immediately bush them with the topping mixture.

  10. Allow biscuits to cool for about 5 minutes before serving.
