black bean noodles

Ingredients:

·         12 ounces of Black Bean Noodles

·         4 tbsp. sesame oil

·         ½ cup spring onions chopped

·         1 cup shredded carrots

·         2 cups stir fry veggies

·         2 tbsp. minced garlic

·         ½ tbsp. ground ginger

·         ¼ cup agave

·         ¼ cup creamy peanut butter

·         ¼ liquid aminos (or soy sauce)

·         3 tbsp. rice vinegar

·         1 tbsp. sriracha sauce

·         1 tbsp. red pepper flakes

·         1 tbsp. garlic powder

 

Instructions:

1.       Cook pasta with a little salt according to the package directions.

2.       Drain pasta and place back into pot.

3.       Add 2 tbsp of sesame oil and toss pasta to coat.

4.       Set aside.

5.       Heat the remaining 2 tbsp of sesame oil in another pot over medium heat.

6.       Add onions, stir-fry veggies, garlic, and ginger.

7.       Add agave, peanut butter, liquid aminos, rice vinegar, sriracha sauce, red pepper flakes, and garlic powder.

8.       Mix well and simmer for 2 minutes.

9.       Pour over pasta and toss well.

10.   Enjoy!
