BBQ “Chicken”

Perfect for those who want to get out and grill!

Ingredients

·         1 (14oz) can of chickpeas (drained)

·         1 tbsp liquid smoke

·         1 ½ cups vital wheat gluten

·         2 tbsp nutritional yeast

·         1 tsp salt

·         1 tsp onion powder

·         1 tsp garlic powder

·         1 tbsp salt free chicken seasoning

·         1 ½ cups vegetable broth

·         1/3 cup of all-purpose flour

·         1 tbsp oil

·         BBQ sauce of your choice

Instructions

1.       Add chickpeas, liquid smoke, nutritional yeast, seasonings, and vegetable broth to blender

2.       Blend until smooth

3.       To a bowl, add vital wheat gluten and your blended mixture

4.       Mix into a dough, and knead until well combined

5.       Place dough on a clean surface that is floured to roll out

6.       Cut into 4 pieces

7.       Wrap each piece in foil. Place them in a steamer basket with water on the bottom and steam for about 30 minutes.

8.       Remove from the foil and let cool

9.       Once cooled filet each of the 4 pieces.

10.   Add cutlets to well oiled grill

11.   Grill both sides

12.   Finish off with BBQ sauce

13.   Enjoy!
