2 ingredient cupcake

Yes, you read right! There are only two ingredients in this cupcake but they taste like you worked so hard in the kitchen. Don't worry, I won't tell anyone you didn't. This recipe has been floating around online for a while now, and I am not sure of it’s original source but I would like to thank them for sharing the wealth! Now me being the extra person that I am, I had to add some ingredients to the list to get the flavor I prefer but this is optional and you my friend, could stick to the original plan.

Ingredients (Original Plan):

 

1 box of Spice Cake (be sure the ingredients are vegan)

1 can of pumpkin puree

 

My optional add-ons:

 

1 tsp. of pumpkin spice

1 tbsp. of vanilla extract

Splash of water

Use icing of your choice (best with vegan cream cheeze icing) just add a little vanilla and pumpkin spice.

 

Serves about 12+

 

  1. Preheat oven to 350 F.

  2. Line cupcake pan with paper liners or grease pan with oil and flour.

  3. Mix all ingredients in a bowl well.

  4. Pour batter into prepared cupcake pan.

  5. Bake for 15-20 minutes (when a toothpick, fork, or knife comes out clean)

  6. Let cool.

  7. Frost with your choice icing.

  8. Enjoy
