Pancakes

I had a lot of leftover blueberries, so the goal became to make a vegan pancake that was both thick and fluffy.

Ingredients:

 

1 cup of fresh or frozen blueberries

2 cups of flour

3 tablespoons of sugar

1 teaspoon of salt

2 tablespoons baking powder

 

Makes about 8 pancakes

 

  1. Grease and heat skillet.

  2. Combine all ingredients in a bowl.

  3. Pour batter into pan.

  4. Cook for about a minute or until ready to flip.

  5. Flip and cook for about another minute or so.

  6. Repeat until all pancakes are cooked.

  7. Top with more blueberries and or maple syrup.

  8. Enjoy!
