Pancakes
I had a lot of leftover blueberries, so the goal became to make a vegan pancake that was both thick and fluffy.

Ingredients:
1 cup of fresh or frozen blueberries
2 cups of flour
3 tablespoons of sugar
1 teaspoon of salt
2 tablespoons baking powder
Makes about 8 pancakes
Grease and heat skillet.
Combine all ingredients in a bowl.
Pour batter into pan.
Cook for about a minute or until ready to flip.
Flip and cook for about another minute or so.
Repeat until all pancakes are cooked.
Top with more blueberries and or maple syrup.
